Country Fare
Cooking with what we have ...
- Deer Liver Terrine -- Make friends with a hunter. Ask for the liver when [s]he turns up bragging about the points on a trophy buck. Clean it under cool water and cut in stew-sized pieces while melting a stick of butter or margarine in a pan. Add the liver pieces, some cut up onion, and cook until done about 30-45 minutes. Pour into food processor (this may take two or three passes) and puree. Pour puree into ceramic bowl and add seasonings -- salt, pepper, ground ginger and cloves, chives, etc. Correct to taste. Refrigerate overnight. Spread on crackers or bread. Call it "venison terrine" if guests arrive.
- Beer Bread -- Buy some beer. Don't drink the last one. Preheat oven to 350 degrees. In medium-sized bowl mix three cups of self-rising flour with two tablespoons of sugar, add one can of fresh or stale beer, and mix with a large spoon until flour is moist. Pack into greased bread pan and bake for about 45 minutes. Cool on rack. Easy. Everyone loves fresh, hot bread!
