CAJUN BEEF BURGERS
1 tblsp margarine, butter or oil ¼ cup chopped celery ¼ cup chopped onion ¼ cup chopped carrot 2 tblsp chopped fresh parsley 1 1b lean, ground beef 1 tblsp dried Cajun seasoning ¼ tsp hot sauce 4 burger buns, split
Heat grill. Melt margarine or oil in skillet. Add celery, onion, carrot and parsley; cook and stir 4-5 mins until vegetables are tender. In a bowl, combine vegetables, beef, Cajun seasoning and hot sauce; mix well. Shape into 4 patties ½ inch thick. Refrigerate for 30 mins. Place on hot grill for 15 mins until thoroughly cooked. Place on buns. 1 tsp (8 tsp) paprika ½ tsp (4 tsp) dried thyme, crushed ¼ tsp (2 tsp) garlic powder ¼ tsp (2 tsp) black pepper ¼ tsp (2 tsp) dried oregano, crushed ⅛ tsp (1 tsp) salt ⅛ tsp (1 tsp) red pepper (cayenne) Mix together ingredients. To make a larger amount use measurements in brackets. Store in spice jar.
