Fresh Tomato Relish |
4 c. diced tomatoes 1/2 c. chopped fresh basil 1/4 c. chopped fresh mint 1 large clove of garlic, minced 1 tbsp. finely chopped shallot 1/4 c. olive oil 1 tsp. course or kosher salt 1/2 tsp. fresh ground pepper |
Combine all ingredients in a mixing bowl. Let stand atleast 30 minutes to marinate. Serve with grilled Italian Bread, chicken or fish. |
