Lemony Summer Vegetables |
2 tbsp. olive oil 1 minced clove of garlic 1 tbsp. finely chopped shallot 1 lb. fresh mushrooms 1 large zucchini diced 1 lb. ripe tomatoes, seed, diced Juice of 2 lemons 3/4 tsp.salt 1/4 tsp. black pepper |
1. Heat oil on med. high heat. Add garlic and shallots. Stir constantly for 1 minute. 2. Add mushrooms and zucchini; continue to cook until softened, about 5 minutes, 3.Increase heat to high, stirring constantly to remove excess liquid. 4. Remove from heat and stir in remaining ingredients. |
