Whole Wheat Croissant Dough

Ingredients:

  1. 1 egg beaten with 1T milk
  2. 2T (1/4 stick) butter
  3. 1/2C diced fresh mushrooms
  4. 1C milk
  5. 4 ozs. diced Canadian ground meat (~1C)
  6. 1T oil
  7. 1 small onion, finely minced
  8. 2T (1/4 stick) butter
  9. 3T all-purpose flour
  10. 1/4t salt
  11. 1/8 freshly ground black pepper
  12. dash freshly grated nutmeg
  13. 3/4lb fresh spinach,
    cooked, drained thoroughly, squeezed dry and
     finely chopped, or:
    10 ozs. pkg.
    frozen spinach, thawed,  drained thoroughly, squeezed dry and finely chopped
  14. 4 ozs. Gruyere cheese  (~1C)
 
 
How to Prepare:

Heat 1T butter in small skillet over medium heat.  Add mushrooms, saute 5 minutes.  Drain liquid from skillet into 1C measure.  Add enough milk to bring it to 1C liquid, set aside with mushrooms.  Heat 1T butter in medium skillet over medium heat.  Add ground meat and saute until just cooked through.  Drain and set aside.

Heat oil in large skillet over medium heat.  Add onion, cover and cook until limp and translucent, about 10 minutes.  Add 2T butter to skillet and let melt.  Add flour and cook 3 minutes, stirring constantly; do not let mixture brown (you're making a light roux with onions in it -- Babs).  Slowly pour milk mixture into skillet, whisking vigorously until blended.  Increase heat to medium-high and bring to a boil, stirring constantly (white sauce -- Babs).  Remove from heat and season with salt, pepper and nutmeg.  Let cool slightly.  Fold in mushrooms, cheese, ground meat and spinach.  Taste and adjust seasonings.  Cover and let cool to room temperature.

Divide and shape dough as for Ratatouille en croissant recipe above, baking until golden brown.
