APPLE, CINNAMON AND RAISIN MUFFINS

Ingredients:

2 cup flour
2/3 cup brown sugar
1 Tbsp. baking powder
1/2 tsp. grated nutmeg
1 egg
1/3 cup safflower oil
2/3 cup unsweetened applesauce
1 tart apple, peeled and finely diced
1 tsp. cinnamon
1/2 cup raisins
1/2 cup chopped nuts
 
 
How to Prepare:
 In large bowl sift together flour, sugar, baking powder and nutmeg. In medium bowl combine egg, oil and applesauce. Whisk until blended.  In another medium bowl toss together apple and cinnamon until coated. Stir in raisins and nuts. Pour egg mixture over dry ingredients and combine. Add apple mixture and blend with few strokes. Bake at 400 degrees in greased muffin pans for 20-25 minutes until golden.
