Cocktail Wieners

1 (16 ounce) can cranberry sauce
12 fluid ounces chili sauce
3 pounds beef cocktail wieners
Directions
1 In a 4-quart saucepan over medium heat, combine cranberry sauce and chili sauce. Break the cranberry sauce into smaller pieces with wooden spoon to speed up the melting process. Stir and heat until the cranberry sauce is melted. Add the cocktail wieners and cook until the wieners are heated. Use toothpicks for serving. Makes 15 servings


Cream Cheese Pickles

8 kosher dill pickles, patted dry
2 (8 ounce) packages cream cheese, softened
2 1/2 ounces thin-sliced beef luncheon meat
Directions
1 Spread or pat cream cheese around each pickle. Wrap 2 sheets of meat around each pickle. Refrigerate pickles overnight, slice before serving. Makes 8 servings


Hungarian Cabbage Rolls

Family Traditions. For new years we have Hungarian cabbage rolls, blackeyed peas, collard greens, corn bread, and cole slaw. Recipe for Hungarian cabbage rolls:
Put one large head cabbage in large pot of salted boiling water.
Boil on medium for 20 minutes or till tender. Leave it on the stove and with a knife and fork, cut off one leaf at a time and follow the following directions:
Work together with hands
1 lb. hamburger
1 lb. sausage
1/2 small box instant brown rice
2 large diced onions
1/2 pod diced green pepper
1 T. parsley
4 T. kraut
4 T. canned tomatoes, diced
1 t. salt
1 t. pepper.
Grease bottom of large pot. place about 1/2 cup mixture on cabbage roll and roll up like an egg roll, tucking ends and trimming hard core top. Line pot with cabbage rolls. Sprinkle about 1 cup kraut and 1 cup tomatoes over rolls. Repeat to make 2 to 4 layers. Cook on medium heat for about 2 hours.


Giant Won Tons

2 (14 ounce) packages small won ton wrappers
1 1/2 pounds ground beef
1 (8 ounce) can water chestnuts, drained and minced
2 stalks celery, chopped
salt and pepper to taste
2 dashes Worcestershire sauce
1/4 cup vegetable oil
Directions
1 In a large frying pan, brown the beef in 2 tablespoons vegetable oil over medium heat. Mix in water chestnuts, onion, celery, and Worcestershire sauce until combined; there is no need to cook the vegetables. Season to taste with salt and pepper. 2 Place one tablespoon of the beef mixture into the center of each wonton wrapper. Fold the sides of the wrapper over the filling, and then roll the wrapper up around the filling egg roll style. 3 In an electric deep fryer or a heavy saucepan, heat oil to 375 degrees F (190 degrees C). Deep fry rolls until their wrappers are golden brown; fry in batches to maintain an even temperature. Once cooked, place the rolls on paper towels to drain. Serve warm. Makes 2 dozen


Weiner Winks

1 (16 ounce) package beef frankfurters
8 slices processed American cheese
8 slices bread
8 teaspoons butter
Directions
1 Preheat oven to 350 degrees F (175 degrees C). 2 Take 1 slice of bread and spread 1 teaspoon of butter on one side. Turn the bread over and place a slice of cheese on the bread. Place a frankfurter diagonally on the cheese. Fold bread corner to corner around the frankfurter. Insert a toothpick to hold together. Repeat steps for the remaining frankfurters. 3 Bake in a preheated oven for 20 to 30 minutes or until golden brown. Makes 8 sandwiches


Ranch snack mix (No baking)

1 pkg.(12oz) miniature pretzels
2 packages(6oz each)bugles
1 can(10oz.salted cashews
1 pkg.6 oz. bitesize cheddar cheese fish crackers
1 envelope ranch salad dressing mix
3/4 c.vegetable oil
In two large bowls,combine pretzels.bugles,cashews,and crackers.Sprinkle with dressing mix,toss gently to combine.Drizzle with oil,toss until well coated.Store in airtight containers.YIELD:6 QUARTS.
