Beef and Noodle Bake


1 pound ground beef
2 cups elbow macaroni
4 cups spaghetti sauce
12 ounces processed cheese food (eg. Velveeta), sliced
Directions
1 Preheat oven to 375 degrees F (190 degrees C). 2 Brown the ground beef in a large skillet over medium high heat; set aside. Cook macaroni according to package directions, drain and set aside. 3 In a 9x13 inch baking dish, layer the macaroni, ground beef, tomato sauce and cheese, repeating two times. 4 Bake at 375 degrees F (190 degrees C) for 30 minutes, or until top layer of cheese is bubbly.


Beef and Bean Pot

1 pound ground beef
1 onion, chopped
6 slices bacon, diced
1 tablespoon distilled white vinegar
1 tablespoon prepared mustard
1/2 cup ketchup
1/2 cup brown sugar
1 green bell pepper, chopped
1 (15 ounce) can kidney beans
1 (16 ounce) can chili beans
1 (15 ounce) can pork and beans
6 slices American cheese
1 cup crushed tortilla chips
Directions
1 Preheat oven to 375 degrees F (190 degrees C). 2 In a large skillet over medium high heat, sauté the ground beef, onion and bacon for 5 to 10 minutes, or until the meat is browned and the onion is translucent; drain excess fat. 3 In a 3-quart casserole dish, combine the vinegar, mustard, ketchup, brown sugar, green bell pepper, kidney beans, chili beans, pork and beans and the meat mixture. Stir together until well blended. 4 Bake at 375 degrees F (190 degrees C) for 45 to 50 minutes, remove from oven and top with the cheese and crushed tortilla chips. Return to oven and bake for 5 to 6 more minutes, or until the cheese is melted and bubbly.


Beef and Biscuit

1 1/4 pounds ground beef
1/2 cup chopped onion
1/4 cup chopped green Chile pepper
1 (8 ounce) can tomato sauce
2 teaspoons chili powder
1/2 teaspoon garlic salt
1 (10 ounce) package buttermilk ready-to-bake biscuits
1 1/2 cups shredded Monterey Jack cheese, divided
1/2 cup sour cream
1 egg, lightly beaten
Directions
1 Preheat oven to 375 degrees F (190 degrees C). 2 In a large skillet, brown the ground beef, onion and green chile pepper; drain. Stir in tomato sauce, chili powder ,and garlic salt. Simmer while preparing the biscuits. 3 Separate biscuit dough into 10 biscuits. Pull each biscuit into 2 layers. Press 10 biscuit halves on the bottom of a 9-inch pie dish to form bottom crust. Reserve the other 10 biscuit halves for the top layer. 4 Remove meat mixture from heat, and stir in 1/2 cup shredded cheese, sour cream, and egg; mix well. Spoon over bottom crust. Arrange remaining biscuit halves to form top crust, and spoon remaining cheese evenly over the top. 5 Bake in preheated oven for 25 to 30 minutes, or until biscuits are a deep golden brown color.


Beef and Cheese Ball

1 (8 ounce) package cream cheese, softened
5 ounces dried beef
1 small white onion, chopped
1 small finely chopped green bell pepper
1 tablespoon Worcestershire sauce
1 teaspoon onion juice
Directions
1 In a medium-sized mixing bowl, combine cream cheese, 2/3 of the beef, onion, green bell pepper, Worcestershire sauce, and onion juice. Mix well and shape mixture into a ball. Using the reserved beef, coat the rest of the ball with beef.

Beef and Pepper Pie

1 pound ground beef
2 cups sweet red peppers, with sauce
1 onion, chopped
1 (4.5 ounce) can sliced mushrooms, drained
1 cup shredded sharp Cheddar cheese
1 recipe pastry for a 9 inch double crust pie
Directions
1 Place peppers, including liquid, into food processor; pulse until peppers are cut into small pieces. 2 Brown meat and onions. Add peppers, mushrooms, and cheese to meat mixture. Spoon into bottom crust. Cover with top crust, and seal the edges. 3 Bake at 350 degrees F (175 degrees C) until crust is brown, and pie is heated through.


Beef Bacon Rolls

1 1/2 pounds top sirloin, lean
1 pound bacon
1 cup chopped onion
1 1/3 cups butter

1 Cut the beef into strips that are approximately 1 inch wide and the same length or close to the length of the bacon strip, about 1/8 inch thick. Serve hot. 2 Make the beef bacon rolls by laying a strip of bacon on a strip of beef and rolling the two meats together so that the beef is on the outside when you finish rolling. Insert a toothpick so that it goes in on the bottom left side and comes out the top right side when looked at vertically. 3 In large skillet, sauté onions and butter until onions are tender. Lay a single layer of beef bacon rolls in the skillet. Brown them on medium heat, turning once or twice. Cover the skillet and simmer about 2 hours.

Beef Noodle Shepherd's Pie

1 pound ground beef
1 1/2 cups hot water
1 (1.25 ounce) package beef with onion soup mix
1/2 cup uncooked elbow macaroni
2 cups mashed potatoes
1 tablespoon paprika
Directions
1 Preheat oven to 425 degrees F (220 degrees C). 2 In a medium skillet, brown beef over medium high heat and drain. Stir in water, soup mix and elbow macaroni; let simmer all together for 5 minutes. 3 Pour mixture into a 9x13 inch baking dish. Top with potatoes and sprinkle with paprika. Bake in the preheated oven for 15 to 20 minutes and serve hot.


Beef Samosas

2 large potatoes, peeled
1 cup peas, drained
2 tablespoons oil for frying
1/2 teaspoon cumin seeds
1 bay leaf, crushed
2 large onions, finely chopped
1 pound ground beef
4 cloves garlic, crushed
1 tablespoon minced fresh ginger root
1/2 teaspoon ground black pepper
1 1/2 teaspoons salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon chili powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
2 tablespoons chopped fresh cilantro
2 tablespoons chopped green chile peppers
1 quart oil for deep frying
1 (16 ounce) package phyllo dough

1 Bring a medium saucepan of lightly salted water to a boil. Stir in potatoes and peas. Cook until potatoes are tender but still firm, about 15 minutes. Drain, mash together and set aside. 2 In a large saucepan over medium high heat, heat the oil. Brown cumin seeds and bay leaf. Mix in onions and ground beef. Cook until beef is evenly brown and onions are soft, about 5 minutes. Mix in garlic, fresh ginger root. Season with black pepper, salt, cumin, coriander, turmeric, chili powder, cinnamon and cardamom. Stir in the mashed potato mixture. Remove from heat and chill in the refrigerator for 1 hour, or until cool. 3 Heat oil in a large, heavy saucepan over high heat. 4 Mix cilantro and green chile peppers into the potato and beef mixture. Place approximately 1 tablespoon of the mixture onto each phyllo sheet. Fold sheets into triangles, pressing edges together with moistened fingers. 5 In small batches, fry until golden brown, about 3 minutes. Drain on paper towels and serve warm.

Beef Stroganoff Bake

1 (40 ounce) bag STOUFFER'S® frozen Skillet Sensations Beef Stroganoff Family Meal, prepared according to package directions
2 tablespoons butter or margarine
1/2 cup sliced onions
1 (3 ounce) package cream cheese, cut into 1/2-inch cubes
1 cup sliced mushrooms
1 1/2 cups crushed herb seasoned stuffing

1 PREHEAT oven to 400 degrees F. 2 MELT butter in medium skillet over medium heat; add onion. Cook until lightly browned. Add cream cheese; stir until melted. Remove skillet from heat. Add stuffing; stir to coat with cream cheese. 3 COMBINE beef stroganoff and mushrooms in a large oven-safe skillet. Cover; cook over high for heat 3 minutes. Uncover; sprinkle with stuffing. 4 BAKE for 15 to 18 minutes or until stuffing is lightly browned.


Hamburger Pie

4 potatoes
1 pound ground beef
1 onion, chopped
2 (10.75 ounce) cans condensed tomato soup
1 (15 ounce) can green beans, drained
1 cup shredded Cheddar cheese
Directions
1 Preheat oven to 350 degrees F (175 degrees C). 2 Bring a large pot of salted water to a boil. Peel and quarter potatoes, and introduce into boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside. 3 In a large skillet over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese. 4 Bake in preheated oven 30 minutes, until potatoes are golden.
