Cheesy Skillet Dinner
1 pound ground beef
1 small onion, chopped
1 (4.5 ounce) can mushrooms, drained (optional)
1 (16 ounce) jar ORTEGA ® Salsa Prima
1 (4 ounce) can ORTEGA ® Diced Green Chiles
2 cups (8 oz.) SARGENTO® 4 Cheese Mexican Blend or ChefStyle Shredded
Mild Cheddar Cheese, divided
1 cup crumbled tortilla chips
Directions
1 COOK beef, onion and mushrooms in large skillet until beef is
browned; drain. Stir in salsa and chiles; bring to a boil. Reduce
heat to low; cook, stirring occasionally, for 2 to 3 minutes.
2 SPRINKLE with 1 1/2 cups cheese and tortilla chips. Top with
remaining cheese. Cover; cook for an additional 2 to 3 minutes or
until cheese melts.
Cheese Puffs
1/2 lb. grated sharp cheese
1/4 lb. butter
1 cup flour
dash cayenne
dash tabasco sauce
dash worcestershire sauce
Mix with fingers & add Worcestershire sauce until a dough forms.
Roll into balls and bake at 350 degrees for 20 minutes.
Cheesy O’Brien egg scramble
1 pkg.(28 oz)frozen O’Brien hash brown potatoes
1/2 tsp. garlic salt
1/4 tsp. pepper
1 can 10-3/4 oz condensed cheddar cheese soup, undiluted.
1 pound sliced bacon, cooked and crumbled
12 eggs, lightly beaten
2 TBLS. butter or margarine
2 cups(8 oz)shredded cheddar cheese
In a large skillet ,prepare hash browns according to package directions. Sprinkle with garlic salt and pepper. Transfer to a greased 2-1/2 qt. baking dish. Top with soup. Set aside 1/2 cup of bacon; sprinkle remaining bacon over soup. In another skillet, scramble eggs in butter until nearly set. Spoon over bacon. Sprinkle with cheese and reserved bacon. Bake, uncovered at 350'for 20-25 minutes or till cheese is melted. YIELD:10-12 SERVINGS.
Cheese Wizards
1 (2 pound) loaf processed cheese, cubed
1 1/2 pounds ground beef
2/3 cup water
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) jar picante sauce
Directions
1 Melt processed cheese in a slow cooker set for high heat. Stir
occasionally to avoid burning.
2 Place ground beef in a large skillet. Cook over medium high heat
until evenly brown. Drain beef, and mix in water and taco seasoning
mix. Cook and stir 2 to 4 minutes.
3 Stir seasoned beef into the melted processed cheese. Mix in salsa.
Cook and stir until well blended. Serve warm. Makes 6 cups
Cheeseburger Pie
2 pounds ground beef
1 onion, chopped
3/4 tablespoon salt
1/4 tablespoon ground black pepper
1/4 tablespoon chili powder
1 can whole peeled tomatoes
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can peas
1 (15 ounce) can green beans, drained
5 cups buttermilk baking mix
1 1/3 cups milk
5 potatoes, cooked and mashed
8 ounces sliced process cheese food
Directions
1 Preheat oven to 450 degrees F (230 degrees C).
2 In a large saucepan over medium high heat, brown the ground beef
for 5 to 10 minutes; drain excess fat. Add the onion, salt, ground
black pepper, chili powder, tomatoes, corn, peas and green beans.
Reduce heat to low and let simmer.
3 Meanwhile, in a large bowl, combine the buttermilk baking mix and
the milk. Mix well to form a dough. Split in half and roll dough out
to line the bottom of a 9x13 inch baking dish. Make sure dough covers
the bottom and sides of the dish.
4 After the beef mixture has simmered for about 15 to 20 minutes,
pour into the baking dish over the dough. Spoon the mashed potatoes
over the beef mixture, spreading evenly. Layer the cheese over the
potatoes. Roll out the other half of the dough to fit over the top.
Trim the edges and seal .
5 Bake at 450 degrees F (230 degrees C) for 25 to 35 minutes, or
until golden brown.
Cheesy Chipped Beef Bake
2 (11 ounce) packages STOUFFER'S® frozen Creamed Chipped Beef
1/2 cup frozen peas
2 1/2 ounces sliced mushrooms with juice
3 tablespoons chopped onion
1 teaspoon CROSSE & BLACKWELL® Worcestershire Sauce
1/4 teaspoon ground black pepper
3/4 cup all-purpose baking mix
1 egg, lightly beaten
1/2 cup milk
1/4 teaspoon onion powder
1 cup shredded Cheddar cheese
Directions
1 PREHEAT oven to 400 degrees F. Combine Creamed Chipped Beef, peas,
mushrooms, onion, Worcestershire sauce and black pepper in medium
bowl; place in 8-inch-square baking pan.
2 COMBINE baking mix, egg, milk, and onion powder in medium bowl;
stir well until smooth. Gently spoon over beef mixture; top with
cheese.
3 BAKE for 30 to 35 minutes or until knife inserted in topping comes
out clean. Makes 6 to 8 servings
Cheesy Tortilla Spirals
1 (11 ounce) package STOUFFER'S® frozen Creamed Chipped Beef
2 (3 ounce) packages cream cheese, softened
1/3 cup shredded Cheddar cheese
2 teaspoons lime juice
1 teaspoon ground chili powder
1/2 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
2 tablespoons chopped green onion
10 (8 inch) flour tortillas
1/4 cup shredded Cheddar cheese
Directions
1 COMBINE cream cheese, 1/3 cup Cheddar cheese, lime juice, chili
powder and cumin in medium bowl; add Creamed Chipped Beef, cilantro
and green onion, stirring well. Evenly divide mixture among
tortillas, spreading to cover each tortilla.
2 ROLL up each tortilla, finishing with seam-side-down. Place rolled
tortillas on baking sheet; sprinkle with 1/4 cup Cheddar cheese.
3 BAKE in preheated 400 degrees F oven for 7 minutes or until cheese
is melted. Let stand 3 to 5 minutes; slice into 1-inch pieces and
serve hot.
4 Note: Recipe can also be prepared without baking. Omit cheese
topping; refrigerate filled and rolled tortillas for at least one
hour to set filling before slicing. Makes 10 servings
Impossibly Easy Cheeseburger Pie
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 tomato, sliced
1/2 teaspoon garlic salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 cup shredded Cheddar cheese
1/2 cup buttermilk baking mix
1 cup milk
2 eggs
Directions
1 Preheat oven to 400 degrees F (200 degrees C). Grease a 10 inch
deep dish pie plate.
2 Heat a large skillet over medium heat. Add ground beef, onion, and
garlic; cook and stir until beef is brown. Drain off fat. Spread into
prepared pie plate.
3 Sprinkle meat with salt, black pepper, and oregano. Arrange tomato
slices over meat, spread shredded cheese on top.
4 In a small bowl, mix together baking mix, milk and eggs. Pour over
cheese.
5 Bake for about 25 minutes, or until knife inserted in center comes
out clean. Cool for 5 minutes before serving.

1 can(10-3/4 oz)low fat condensed cream of broccoli soup,undiluted.
1 can low fat cream of chicken soup,undiluted
2 c.skim milk
1/2 cup light sour cream
2 c.(8oz) shredded part skim mozzarella cheese
1 c.shredded reduced fat cheddar cheese
2 c.uncooked instant rice
2 c.chopped fresh broccoli
1 small onion,chopped
1 tsp.paprika,divided
1/2 tsp.pepper
In a large bowll,combine soups,milk,and sour cream.
Stir in cheeses,rice,broccoli,onion,3/4 tsp.paprika and pepper.Transfer to a 9x13 baking dish sprayed with cooking spray.sprinkle with paprika.Cover and bake at 350' for 35 minutes.Uncover,bake 5-10 min.longer or till rice and broccoli are tender.YIELD:16 servings.
