Peachy Raspberry
For a light summer dessert, top fresh peach halves with scoops of
fruit sorbet. Serve on colorful plates with fresh raspberries.
Cream-Filled Strawberries
18 jumbo strawberries
1 cup whipping cream
1 pkg instant vanilla pudding
1 cup milk
1 tsp almond extract
Cut stem off berries. With knife, cut a deep "X" in top of each
fruit. With fingertips, gently spread each berry apart to make
petals; set aside. In bowl, with mixer at med. speed, beat cream til
stiff peaks form. In lg. bowl, with whisk, prepare pudding as label
directs but use only 1 cup milk. With whisk, gold cream and elmond
into prepared pudding. Spoon pudding into decorating bag with large
writing tube. Pipe cream mix into strawberries. Cover & fridge if not
serving right away.
Fruit Leather
Grind any fruit in the blender - berries work best. Don't add water
unless the blender cannot function without it. Spread thinly on a
plastic-wrap-lined cookie sheet. Place in oven at 250 degrees
overnight. Peel and enjoy!
Peach Fool
3 medium size ripe peaches
2 TBSP sugar
1 cup whipping cream
1/8 tsp. almond extract
Mint leaves for garnish
Peel, halve, and pit peaches. Reserve 1 peach half for garnish. Cut
remaining peaches into chunks. In blender at med. speed, blend peach
chunks & sugar til smooth. In small bowl, with mixer at med. speed,
beat cream and almond til stiff peaks form. With rubber spatula, fold
peach puree into cream mix. Pour into parfait cup. Garnish with peach
slices and mint leaves.
Warm Fruit Compote
4 oz. pitted prunes
4 oz. dried apricot halves
1/2 cup apple juice
2 tsp. light brown sugar
1/4 tsp. ground cinnamon
1 large banana
Whipped topping: In small bowl, with mixer at med. speed, beat 1/4
cup well chilled evaporated skimmed milk and 1 TBSP confectioners
sugar til stiff peaks form.
In 2 quart saucepan over high heat, heat prunes, apricots, apple
juice, brown sugar, and ground cinnamon to boiling. Reduce heat to
low; cover and simmer 10 minutes, stir often. Meanwhile, cut banana
into 1 inch chunks. Prepare Whipped Topping as directed above. Remove
pan from heat. Gently stir banana into dried-fruit mixture. Spoon
warm fruit and Whipped topping into 4 dessert plates.
Raspberry Fool
1 (10 oz) pkg. frozen quick-thaw raspberries in light syrup, thawed
1 cup whipping cream
1/8 tsp. almond extract
Over bowl, with back of spoon, press & scrape thawed raspberries with
their syrup firmly against mesh sieve to separate seeds. In small
bowl, with mixer at med. speed, beat cream & almond til stiff peaks
form. With rubber spatula, fold berries into cream mix. Serve in
parfait cup.
Creamy Orange Dip and Fruit
Ingredients:
1 package cream cheese
1/2 cup brown sugar
1 teaspoon finely shredded orange peel
1/3 cup crushed pecans
1 tsp. vanilla
Mix together all ingredients until smooth. Place in a nice bowl and
surround on a tray or platter with strawberries, kiwis, grapes, apple
slices, oranges, pear and peach slices. You may use all of these or
some. If your kids are like mine and don't like nuts, you can leave
those out if you wish.
Jellified Oranges
5 Medium thick-skinned navel oranges
1-3 oz. pkg. orange Jell-O
1 cup boiling water
1 cup orange juice
2 Envelopes Knox gelatin dissolved in 1 cup cold water
1/2 cup sugar
1 Envelope orange Kool-Aid
Cut oranges in half; juice (reserving juice) and scoop out pulp. Set
orange shells in custard cups or muffin tins. Fill and chill. Cut in
eighths.
Kiwifruit Fool
3 large kiwi
2 TBSP sugar
1 cup whipping cream
1/8 tsp. vanilla extract
Peel kiwi. Cut into chunks. In blender at med. speed, blend kiwi &
sugar til smooth. In small bowl, with mixer at med. speed, beat cream
and vanilla til stiff peaks form. With rubber spatula, fold kiwi into
cream mix. Serve in parfait cup.
Gingered Fruit
2 (17 oz) cans apricot halves in heavy syrup
1 (17 oz) jar figs in heavy syrup
3 lg. Red Delicious Apples
3 lg. pears
3/4 LB. seedless red grapes
3/4 LB. seedless green grapes
1/3 cup finely chopped preserved ginger in syrup
2 TBSP lemon juice
In lg. bowl, pour apricots & figs with their syrup. Cut unpeeled
apples and pears into bite size chunks. Add apples & pears to fruit
mix. Add grapes, ginger & lemon juice; toss to mix well. Cover &
fridge at least 1 hour.
