Diploma Rolls
12 Rhodes Texas rolls, thawed but still cold
12 slices turkey or ham
12 slices cheese
Roll each roll into a 4 x 6-inch rectangle. Cut off a 1/4 inch strip from
the 6-inch side, and set aside. Place one slice of meat and one slice of
cheese on each roll. Meat and cheese should be no larger than roll. Roll
up in jellyroll fashion. Tie with the 1/4 inch strip of dough. Place
rolls on baking sheet sprayed with non-stick cooking spray. Cover with
sprayed plastic wrap. Let rise 30 minutes. Remove wrap and bake at 350F

Diploma Cake
Here's an easy but very effective cake for a graduation. Make a sponge
cake in a jelly-roll pan. Spread it with fresh sliced strawberries and or
blueberries, or even jam, and then roll it up like a jelly roll. Frost it
with whipped cream. Then take ribbon in your graduate's school colors and
wrap it around the cake and make a bow. For an edible ribbon, use fruit
roll-up snacks cut into ribbon width. Your cake will look just like a
large diploma, and taste great too!
Graduation Cupcakes
Ingredients
boxed chocolate cake mix
canned chocolate frosting
chocolate graham crackers
licorice strings
food coloring
Bake cupcakes according to box directions. (No cupcake wrappers needed, but grease and flour the muffin tins.) Remove cupcakes from oven and let cool completely. Then remove from the tins. Turn each cake upside down on a foil-lined cookie sheet. Color frosting with food coloring, usually the school colors. Spread frosting on the cupcake sides and some on top, careful, it might get "crummie". Frost the gram craker and stick on top of the cupcake. The entire masterpiece should now be entirely frosted. Tie licorice strings into tassels and use frosting to attach to the caps.
