Easter Mints

1/3 c Soft butter
1/3 c Light corn syrup
1/2 ts Salt
1 ts Flavoring
3 1/2 c ( 1 lb ) sifted confectioner's sugar
Large bowl
Wooden spoon
Paper plates
This recipe is more fun when mixed by little hands. Flavor it with any liquid flavorings. If you want, you can instead divide it into seperate portions and add a few drops of food coloring to tint it. Then knead a small amount of flavoring into each one. This recipe makes about 1 1/2 lbs of candy. Measure all ingredients into the large bowl stiring with a wooden spoon until it becomes too stiff. Then knead it until the dough is smooth
Put portions of the dough on a paper plate to work on. Pinch off pieces, roll them into balls, and press them lightly with a fork to make a fancy butter mint. Leave the mints on the plates and refrigerate them for 30 minutes, until they become firm. Easter Mints taste even better the next day. Cover with plastic wrap and store them in the refrigerator.


Cinnamon Toast

Mix 2 tablespoons sugar with 1 teaspoon cinnamon until blended.
Place in a shaker or cup. Toast 4 pieces of bread and spread with butter or margarine right away. As soon as it melts sprinkle the cinnamon sugar evenly over each piece of toast and serve!

S'more Mix

2 cups honey graham cereal
1 cup tiny marshmallows
1 cup peanuts (optional)
1/2 cup semisweet chocolate chips
1/2 cup raisins, or chocolate covered raisins
Mix all ingredients in a large plastic bag. Tightly close bag and shake well.


Waffle Treats

Toast frozen waffles until browned nicely.
Remove and place on a plate or in a shallow bowl. Top with one scoop of vanilla ice cream and drizzle caramel topping over each one. You can also try this with frozen yogurt and fruit topping!


Banana Toast:

Peel and slice 2 bananas (butter knives will work for this).
Toast 4 slices of bread and arrange them on a cookie sheet.
Divide the bananas among the pieces of toast-covering the bread. Sprinkle with brown sugar -use about 2 tablespoons for all four pieces. Place the toast under a broiler for a minute or two-watch carefully-remove when bubbly! ***(Mom or Dad needs to help with this step!) ***. Cool lightly and eat!


Kid's Ice Cream

Create your own ice cream.
Soften a pint of ice cream and let your kids add their own ingredients such as chocolate chips, mini marshmallows, crushed cookies, or fruit.
Freeze for 2 hours then serve.

Banana Cream Pudding

Vanilla Wafers
Bananas
3 boxes Instant Vanilla Pudding
5 cups milk
Cool Whip
Sour Cream
With a wire whisk, beat pudding and milk. Let stand til firm. Fold in Cool Whip and Sour cream. In bowl, alternate layers of wafers, sliced bananas, and pudding mix.
