Lemon Bar Cookies
1 cup soft butter
1/2 cup powdered sugar
2 cups flour
dash of salt
4 eggs, beaten
1/4 cup flour
2 cups granulated sugar
6 tablespoons fresh lemon juice
grated rind of 2 lemons
Combine butter, sugar, flour and salt and mix well. Press mixture
in 9 x 13-inch greased pan. Bake at 350 F for 15 minutes or until
lightly browned.
Combine flour and sugar; mix in beaten eggs, lemon juice and rind.
Pour onto slightly cooled crust. Bake at 350 F for 25 minutes or
until filling is set. Cool and sprinkle with powdered sugar.
Lemon Blueberry Biscuits
2 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 carton (8 ounces) lemon yogurt
1 egg, lightly beaten
1/4 cup butter or margarine, melted
1 teaspoon grated lemon peel
1 cup fresh or frozen blueberries
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon lemon juice
1/2 teaspoon grated lemon peel
In a large bowl, combine dry ingredients. Combine yogurt, egg, butter
and lemon peel; stir into dry ingredients just until moistened. Fold
in blueberries. Drop by tablespoonfuls onto a greased baking sheet.
Bake at 400 degrees for 15-18 minutes or until lightly browned.
Combine glaze ingredients; drizzle over warm biscuits. Yield: 1 dozen.
Lemon Juice Juleps
Ingredients
2 cups cold water
2/3 cup of fresh lemon juice (about 2 lemons)
1/3 cup of sugar
4 rinsed mint sprigs
Directions
Combine ingredients in a medium-sized glass bowl. Let the mixture set
for 30 minutes. Then strain the liquid into a serving pitcher and
pour in 1 quart of ginger ale. Serve over ice in tall glasses. Makes
about 8 servings.
Lemon Snowballs
1/2 c Butter
3/4 c Sugar
2 ts Grated lemon rind
1 Egg
3 tb Lemon juice
1 tb Water
1 3/4 c Flour
1/4 ts Baking soda
1/2 ts Salt
1/4 ts Cream of tartar
1/2 c Finely chopped pecans
Instructions:
Makes 4 dozen Heat oven to 350 degrees.
Grease baking sheets.
Cream fist six ingredients together.
Sift flour, baking soda, salt and cream of tartar together and add to
creamed mixture along with nuts.
Make 1-inch balls and place 1-inch apart on baking sheet.
Bake 10-15 minutes until cookies are light brown on bottom.
Cool slightly and roll in powdered sugar.
Lemon Snow Flakes
1 box lemon cake mix with pudding
2 1/4 cups whipped topping thawed
1 egg
Mix all ingredients at medium speed with mixer until blended. Drop in to
bowl of powdered sugar a teaspoonful at a time. Roll to coat. Place on
ungreased baking sheets. Bake at 350 degrees for 10 to 12 minutes until

Old Fashioned Lemon Sugar Cookies
3 cup unsifted flour
2 tsp. baking powder
1/2 tsp. salt
2 cup sugar
1 cup shortening
2 eggs
1/4 cup lemon juice
additional sugar
Preheat oven to 350°. Stir together flour, baking powder and salt;
set aside. In large mixing bowl, beat sugar, and shortening until
fluffy; beat in eggs. Stir in dry ingredients. Add in lemon juice.
Mix well. Chill 2 hours or overnight. Shape into small balls, 1 1/4
in or less; roll in additional sugar. Place on greased baking sheets
2 inches apart; flatten with egg turner. Bake 8-10 minutes or until
lightly browned.
