Nachos

1 pound ground beef
8 ounces shredded Cheddar cheese
3/4 (18 ounce) bottle barbecue sauce
1 (14.5 ounce) can stewed tomatoes, drained
1 (15 ounce) can whole kernel corn, drained
1 (14.5 ounce) package nacho-flavor tortilla chips
Directions
1 Brown beef in a large skillet over a medium-high heat. Drain the fat from the pan once the meat is browned. 2 Mix Cheddar cheese, tomatoes, corn and barbecue sauce into the meat. Heat this mixture, stirring occasionally. 3 While the mixture is heating, make beds of chips onto 4 plates. Pour the hot mixture over the chips. Enjoy! Makes 4 servings


Taco Nachos

1 pound ground beef
1 (1 ounce) package taco seasoning mix
3/4 cup water
3/4 pound processed cheese, cubed
1 tablespoon milk
1 (12 ounce) package tortilla chips
1 (16 ounce) can refried beans
1/2 cup chopped fresh tomato
1/3 cup chopped green onions
Directions
1 Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and mix in taco seasoning mix and water. Continue cooking 5 minutes. Remove from heat. 2 Place processed cheese and milk in a small, microwave safe bowl. Microwave on high until melted, 1 to 2 minutes. Stir until blended and smooth. 3 Place tortilla chips on a large, microwave safe dish. Spread with refried beans. Top with beef and cheese and mixtures. 4 Microwave approximately 2 minutes on high, until the cheese has melted into the beef. Top with tomato and green onions. Serve warm. Makes 6 servings


Over The Top Nachos

1 pound ground beef
1 onion, finely diced
salt and pepper to taste
2 cups shredded Cheddar cheese
1 (16 ounce) can refried beans
1 (14.5 ounce) package tortilla chips
1 fresh jalapeno pepper, sliced
Directions
1 In a large frying pan, brown ground beef with onion, salt and pepper over medium heat. Break the meat into very small pieces while it is cooking. After the meat is thoroughly cooked, drain off the grease. 2 Arrange chips on a microwavable platter. Spread beans over the chips. Layer with 1/2 of the cheese, the ground beef mixture, and remaining cheese. Arrange jalapeno peppers on top. 3 Microwave on medium-high until cheese has melted. Serve immediately. Makes 6 servings


Campbell's Chicken & Nachos

1 can Campbell's Cheddar Cheese Soup
1/2 cup Pace Chunky Salsa
2 cans (5 oz. each) Swanson Chunk Chicken, drained
1 bag (10 oz) tortilla chips
Chopped tomato, sliced green onions, sliced pitted olives
Mix soup, salsa, & chicken in pan. Heat through. Serve over chips. Top with garnishes.
