Americana Peanut Cheesecake

3/4 cup chopped roasted peanuts
1 cup graham cracker crumbs
1/3 cup butter, melted
2/3 cup creamy peanut butter
4 packages (3 oz. each) cream cheese, softened
1 can (14 oz.) sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
1 container (4 oz.) frozen whipped topping, thawed
2 tablespoons chopped roasted peanuts
Combine peanuts, graham cracker crumbs and melted butter. Press crumb mixture into 9-inch spring form pan. Chill crust for 20 minutes.
Using electric mixer, cream softened cream cheese and peanut butter until fluffy. Gradually add condensed milk and mix well. Add lemon juice and vanilla and blend well. Fold in whipped topping.
Pour mixture into prepared crust. Garnish with chopped peanuts. Chill 2-3 hours. Makes 12 servings.


Classic Peanut Butter Cookies

1 cup unsalted butter, softened
1 cup crunchy peanut butter
1 cup granulated sugar
1 cup light brown sugar, firmly packed
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Cream together butter, peanut butter and sugars. Beat in eggs. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
Roll into 1" balls and put on baking sheets. Flatten each ball with a fork, making a criss- cross pattern. Bake in a preheated 375oF oven for about 10 minutes or until cookies begin to brown. Do not over- bake. Makes 4 dozen cookies.


Creamy Peanut Fruit Dip

For a snazzy fruit dip, add a touch of honey or sugar to the Creamy Peanut Sauce. Serve with sliced apples, pears, and bananas.
1/4 cup peanut butter, room temperature
1/4 cup plain, nonfat yogurt
1 garlic clove, minced
1 teaspoon sugar
1 teaspoon sodium-reduced soy sauce
1/4 teaspoon dark sesame oil
1/2 teaspoon ground ginger
1/8 teaspoon crushed red pepper flakes, or to taste
1 tablespoon hot water
Combine all ingredients in a mixing bowl and mix well using a wire whisk. Makes 1/2 cup. Can be stored covered in the refrigerator for several days.


Honey Peanut Butter Popcorn

2 quarts popped popcorn
1/2 cup sugar
1/2 cup honey
1/2 cup peanut butter
1/2 teaspoon vanilla
Cook honey and sugar to a roiling boil. Remove from heat and add peanut butter and vanilla. Pour over popcorn, stirring to coat.


Noodles with Peanut Sauce Salad

1/2 lb cooked spaghetti
1/2 cup peanut butter
1/2 cup water
4 Tbsp soy sauce
1 tsp peeled, minced ginger root
2 Tbsp brown rice syrup
2 Tbsp brown rice vinegar
1 tsp chili powder
dash cayenne
1/4 cup chopped onion
raisins
Cook the spaghetti according to the package instructions. Meanwhile, place the peanut butter and water in a large bowl and whisk until smooth. Add the soy sauce, ginger root, rice syrup, rice vinegar, chili powder and cayenne pepper and whisk. When the spaghetti is done, rinse it with cold water and drain. Add the spaghetti and onions to the peanut sauce and toss well until the spaghetti is coated with the sauce. Refrigerate for several hours or overnight. Before serving, toss the spaghetti again. Divide among four plates and sprinkle raisins over each serving.


Peanut Banana Bread

1/3 cup butter
2/3 cup sugar
1 egg
2 egg whites
1/2 tsp. lemon extract
1 1/4 cups mashed, ripe bananas
1 cup white flour
3/4 cup whole wheat flour
2 1/2 tsps. baking powder
1/4 tsp. salt
3/4 cup coarsely chopped, unsalted, dry- roasted peanuts
In a large bowl, cream together butter and sugar with a mixer. Add eggs, lemon extract and bananas. Mix well. Sift together flours, baking powder and salt. Gradually add to banana mixture. Fold in peanuts. Pour into a greased 8 1/2-inch by 4 1/2-inch loaf pan. Bake in a 350 degree oven for 1 hour or until done.

Peanut Butter and Jelly Pitas

8 Small pita bread rounds
Peanut butter
Jelly (your choice)
Spread peanut butter and jelly inside each of the pita rounds. You can substitute honey for the jelly if desired. You can also stuff peeled apple slices inside.


Peanut Butter Banana Roll-Ups

flour tortilla
peanut butter
banana slices
honey
Spread peanut butter on the tortilla. Evenly layer banana slices over peanut butter. Drizzle with honey. Roll tortilla up and eat.


Peanut Butter Banana Shake

1 small banana, peeled
1/4 cup smooth peanut butter
1/2 pint vanilla ice cream
1 cup milk
Combine all ingredients in blender and process until smooth.


Peanut Butter Cheerio Bars

1/2 c Peanut butter
1/2 c Sugar
1/2 c Honey
3 c Cheerios cereal
Salted peanuts
Combine the sugar and honey in a saucepan. Bring to a boil, stirring constantly. Remove from heat and stir in peanut butter. Combine peanut butter mixture with cereal and peanuts. Spread in a greased 9x13 pan and let cool before cutting into squares.
