Pickle Roll Ups
16 ounces shredded corned beef
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) jar dill pickles, chopped
Directions
1 Spread cream cheese over a meat slice to cover. Place a pickle
piece on one end, and roll the meat up. Repeat with remaining
ingredients. Cut into 1 1/2 inch pieces, and chill until ready to
serve. Makes 10 servings
Reuben Roll Ups
8 (12 inch) flour tortillas
1 cup Russian-style salad dressing
2 pounds prepared cole slaw
1 pound corned beef, chopped
2 cups shredded Swiss cheese
Directions
1 Warm tortillas in microwave to soften; keep covered with a damp
towel.
2 Spread one side of each tortilla with 2 tablespoons Russian-style
salad dressing. Arrange equal amounts of the cole slaw in the center
of each tortilla. Sprinkle equal amounts corned beef over the cole
slaw. Top with equal amounts of Swiss cheese. Tightly roll tortillas
around the fillings. Chill in the refrigerator until serving. Makes 8 rollups
Tortilla Rollups V
10 (10 inch) flour tortillas
1 (8 ounce) package jalapeno cream cheese
1 (5 ounce) jar pimento cheese spread
1 (8 ounce) jar salsa
1 (4 ounce) jar dried beef
1 bunch green onions, diced
Directions
1 Lay tortillas flat and spread each with equal amounts of jalapeno
cream cheese, pimento cheese spread, and salsa. Layer each tortilla
with two pieces dried beef, and sprinkle with green onions. Tightly
roll. Cut into bite-sized pieces and secure with toothpicks. Cover
and chill in the refrigerator at least 12 hours before serving. Makes 10 servings
