Salsa Rapida

2 tomatoes, peeled & chopped
1 onion, peeled & chopped
1 clove garlic, crushed
1 small red hot pepper, chopped finely
3 sprigs parsley, chopped coarsely
1/2 t. coriander, ground
1 t. salt
Dash of marjoram
Dash of ground cloves
Mix vegetables together & add seasonings. Makes 1 cup.


Fresh Salsa

This is a salsa recipe that I received from my mil. For parties, I double it. After 2-3 days, it starts to get a wilted taste and texture to it, but it's usually eaten before then anyway.
SALSA RECIPE
1 small can green chiles
1 can black olives, chopped and drained
2 med. Ripe tomatos, diced
6 to 7 green onions, diced
Mix the above together. Then mix the following and add to tomato mixture:
2 tbsp. Wine vinegar
3 tbsp. oil
¾ tsp. Pepper
Make a few hours before serving.
