Maple Squares
Ingredients:
3/4 cup peanut butter
1/2 cup maple syrup
1 1/2 cups nonfat dry milk powder
about 2 tablespoons chopped peanuts
Mix the peanut butter and maple syrup until well blended. Add the
milk powder, stir well. Spread the mixture into a loaf pan. Pat it
down to make an even layer. Sprinkle the peanuts over the mixture and
press gently. Chill 1 hour. Cut into 1 inch squares. Keep covered and
chilled until you serve. Makes about 32 squares.
Blueberry & Cheese Squares
(NO BAKE DESSERT)
Ingredients
2 cups graham cracker crumbs
1/2 cup butter, melted
1 (8 ounce) package cream cheese
1/4 cup milk
2 tablespoons confectioners' sugar
1 (21 ounce) can blueberry pie filling
1 cup heavy whipping cream
3 tablespoons white sugar
1 teaspoon vanilla extract
Directions
1 In a small bowl, stir together the graham cracker crumbs and
butter. Set aside 1/2 cup for topping, and press the rest of the
crumbs into the bottom of a 7x11 inch-baking pan. Set aside to chill
in the refrigerator.
2 In a small bowl, beat the cream cheese, sugar and milk until
smooth. Spread evenly over the chilled crumb layer. Spread the pie
filling over the cream cheese layer, and chill while preparing the
whipped cream. In a chilled bowl, whip the heavy cream, sugar and
vanilla until stiff, spread over the top of the blueberry layer.
Sprinkle the top with the remaining graham cracker crumb mixture and
keep chilled until serving time.
Chocolate Squares
2/3 cup shortening
2 1/2 cups packed brown sugar
3 large eggs (4 small)
2 3/4 cups flour
2 1/2 tsp. baking powder
2 tsp. vanilla
2 cups chocolate chips
1 1/2 cups chopped pecans
Pre-heat oven to 350 degrees. Cream shortening & sugar well. Add
eggs, beating well. Add flour, baking powder and vanilla. Mix in
chocolate chips and nuts. Pour batter into a well-greased 9 x 13"
baking pan. Smooth out evenly with wet hand. Bake at 350 degrees for
25 to 35 minutes. Cut into squares while warm. Makes 4 dozen
squares.
