Refried Beans & Cheese Quesadillas
These are very simple to make and are often well liked by all. This was a favorite amongst the day care kids I grew up with and I still make it when I'm feeling rather lazy or pressed for time.
You will need a large skillet, spatula, cutting board or large plate, and a pizza cutter.
Spread refried beans over the complete face of one tortilla. Sprinkle desired amount of cheese over the beans. (Doesn't take as much as you'd think). Too much cheese will melt out and burn on the pan. Place another tortilla directly on top.
In large skillet over medium heat brown the quesadilla on one side and then flip it over to brown on the other. It doesn't take more than 1-2 minutes on either side. You do not want to blacken the quesadilla. Once it is completely crisped on both sides transfer to large cutting board or plate. Cut into eighths with the pizza cutter. Serve hot as finger food.
Suggestions and variations: For more taste try adding some of your favorite foods such as olives, onions, chile peppers, bell peppers, tomatoes, etc. It also goes quite nicely with Tabasco or other hot sauces.
One entire quesadilla may feed one adult or two children, depending on the size of the quesadilla and the size of the appetite!
