Ground Beef Stew

Stew is feel good food. It feels good in the mouth, in the tummy, and just all over. I made this up when my husband was sick with the flu (not stomach flu) and he actually ate TWO bowls when he was hardly eating ANYTHING!! Try it out, doctor it to your likings. I think its tasty! (Note: the stomach flu usually dictates a much milder diet lacking a lot of protein and fat for easier digestion)

(Feel free to add your own ingredients, such as celery, peas, beans, mushrooms, etc. Add peas towards last few minutes of cooking)

Brown ground beef in a large skillet and drain. Then combine all ingredients in a large pot and simmer for about 1 1/2 hours or until potatoes are tender. Serve hot.

Makes approx 6-8 servings
