Fruit-Glazed Salmon
Serves 2-3
2 large salmon
fillets
2 very ripe
nectarines
1 ripe pear
2-3 cloves garlic
1/4 cup lemon juice
1 tsp. GF soy sauce
1 Tbs. honey
3 cardamom pods
1 whole clove
1/4 tsp. cinnamon
approximately 1 tsp. fresh ginger, peeled
Preheat oven to 400 degrees.
Lightly oil a glass or ceramic baking dish with olive or vegetable oil.
Wash salmon fillets in cool water, pat dry, and put in baking dish with
skin side down.
Cut nectarines and pear into large chunks, removing core and pits.
Combine fruit chunks, garlic cloves, lemon juice, soy sauce, honey,
and spices in a food processor. Blend until smooth and well-mixed.
Pour fruit mixture over fillets. Bake uncovered 30-40 minutes, until
fruit sauce is slightly reduced.
Serve fish next to brown or basmati rice
and grilled vegetables. Pour extra fruit sauce over fish.
