The tray of fruit will be raised, let drain, and then swung around and lowered onto the waiting four wheeled cart. The solution in which the grapes are dipped was invented by a Greek settler called Voullaire. We used Voullaire's Emulsoil and Potash. The oil removes the outer bloom on the berries, and allows the potash to perforate the skin. This lets the fruit lose moisture quickly, and of course, a shower of rain can rapidly replace the lost moisture. |
