The Drying Green
The dried sultanas need to have more moisture removed. They are spread on lengths of waterproof plastic. During the day the sheets are opened and the fruit raked out. If rain threatens, and each night, the sheets are folded to cover and protect the fruit from moisture. The wooden boxes beside the sheets are called Sweatboxes.
When the fruit reaches the required 18% moisture, it is packed in the sweatboxes, and all the rack hessians are packed away for another day. At the end of the season they are dusted with sulphur, to prevent any mould developing over the winter.
