Summer Pruned Dried Sultanas.
The Australian alternative method of harvesting sultanas is to dry the fruit while it is still on the vines. The fruit bearing canes are cut after the second bud, leaving the new canes that will produce next year's crop. The leaves and bunches of fruit wither and dry, giving us purple dried sultanas. If it rains, the drying fruit will be sprayed with the dipping chemicals to try to save the crop.
