Banana Pound Cake

1 package (18 1/2 ounces) yellow cake

4 eggs (room temperature)

1/3 cup oil

1/2 cup water

1 1/3 cups mashed bananas (about 4 medium)

1 package (3 3/4 ounces) instant vanilla pudding

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1 teaspoon vanilla

Banana Pound Cake

 Preparation: 20 minutes * Cooking: 1 hour *Serves 8

Bananas are high in potassium, niacin and vitamins A and C.

* Preheat an oven to 180ºC (350ºF). Coat a 23-by-13-cm (9-by-5-inch) loaf pan with nonstick cooking spray.

* Combine all ingredients in a large mixer bowl. Mix until blended, then beat at medium speed for 4 minutes.

* Pour the batter into the greased and lightly floured 10 inch loaf pan and bake until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool for 10 minutes.

* If desired, dust with confectioner's sugar before serving.

* To serve, cut into slices. One serving is 1 slice. Store wrapped in plastic wrap in an airtight container in the freezer for up to 1 month.
