Chocolate Cheesecake Cups

INGREDIENTS
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cups sugar
  • 1/3 cup unsweetened cocoa
  • 1 tablespoon instant coffee granules
  • 3/4 cup water
  • 1/3 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 1 (8 Oz) Pkg. nonfat cream cheese, softened
  • 1/2 cup sifted powdered sugar
  • 1 egg
  • Vegetable cooking spray
  • 1/2 cup semisweet chocolate morsels I decrease this amount
  • 1/4 cup chopped almonds optional
INSTRUCTIONS
  1. Combine first 6 ingredients in a large bowl. Combine water, applesauce, and vanilla; stir mixture well. Add applesauce mixture to dry ingredients, stirring with a wire whisk until blended. Set aside.
  2. Beat Cream cheese at medium speed.of an electric mixer until creamy. Add powdered sugar and egg, beating until blended. Set aside.
  3. Place paper baking cups in muffin pans, and coat with cooking spray; spoon chocolate batter into cups, filing half full. Spoon cream cheese mixture evenly over chocolate batter. Sprinkle chocolate morsels and almonds evenly over cream cheese mixture.
  4. Bake at 350 degrees for 25 minutes or until a wooden pick inserted in center come out clean. Let cool on a wire rack 5 minutes. Remove from pans, and let cool completely on wire rack.
