Place chicken, onion, celery & carrot in large pot.Cover with water and add boullion cubes if desired.Simmer until chicken is completely cooked.Remove chicken from broth, cool and remove from bones. Cut meat into bite-sized pieces. Return bones & skin to broth and continue to simmer until broth has been reduced down to a cup or two. Strain broth.
Combine chicken, broth, canned soups and canned mixed vegetables (undrained)in a large pot. Heat through and serve.
When making this at camp, we prepare the chicken and broth at home and freeze it, taking it to camp frozen.
We have made Brownie Stew this way since we were Brownies. It was the main course for our Thanksgiving Dinner for many years. To fill out the meal we also made ants on a log with peanut butter and cream cheese, dinner rolls, baked apples for desert and fizzy fruit punch.
Mrs. H. always cooked the chicken and we brought all the rest and everyone helped to cook and clean up.
