Ingredients:
2 cups cooked rice
1/2 cooked chicken - cooked, boned and cubed
1 jar salsa sauce (Ed likes Chi-Chi brand)
1 large bag plain tortilla chips
At home:
Cook rice, cool and pack in a zip-lock bag or covered bowl
Cook chicken, cool and cut up, pack in a zip-lock bag or covered bowl and freeze to insure
freshness.
At camp: Mix all together well and serve cold with tortilla chips for scooping.
Great fast to fix lunch!
