We love to cook for our Dad on Father's Day. So come join us for a great day to honor Dad with food!
First we honor Dad by all going to Church. This always makes our Dad very happy! After Church Mom and all of us kids gather in the kitchen to cook Dad his favorite foods. Of course he sits on the sofa and just relaxs and smiles as he hears us busily cooking in the kitchen. Our Dad is a great cook and he enjoys cooking for us, but on this Day we cook for him.

FEAST FOR FATHER
Your dad will be so very happy and proud of you if his Father's Day dinner is cooked by you! Ask your Mother to be your assistant. She will be happy to help you plan the menu, go shopping, set the table and give any other help needed with the recipes you plan for your family.
First you need to plan what you are going to cook for the meal. Ask your Mom, brother or sister "What are Dad's favorite foods?" Does your Dad like to Bar-B-Que outside? Then you and Mom can do the Bar-B-Queing today. Is his favorite Chicken, Beef or Fish? Whatever it is - - - that should be what you fix, because it is his special day. If no one knows the answer to this question, then it is time to ask Dad what his favorite is.
Our Dad loves fruit salad and he likes to make it for parties and get-togethers. Since it is summer and fresh fruit is in abundance it is the perfect time to make a great big bowl of fruit salad.
It's great fun to go shopping with Mom for the groceries that you are going to use. Be sure and jot down a list of the food you need for the menu. Mom will help you check in the kitchen to see what is already on hand.
Helpful Hints for Cooking Father's Day Dinner
1. Plan ahead. Look over your recipes, and make your list to go shopping. Bake the cake the day before. That way you do not need to bother with the cake while you are busy cooking the dinner.
2. You can make the fruit salad the night before and place in refrigerator over night.
3. If you are planning to cook outside be sure and get the grill cleaned and ready.
4. Cook the meal.
5. Set the table.
6. When all the food is cooked, you're ready to take your dinner to the table. Don't forget to use hot pads when removing food from the oven or grill.

HAWAIIAN LULAU
For some great fun be sure and buy some Lais at your local party shop. Each child can give Dad a different colored lai. Our Dad gave us each a lai and a customary kiss. Then he spoke a blessing over each one of us as he place the lei on. Decorate with Coconuts and Pineapples. Hula girls and parrots are also popular decorations for Hawaiian parties. For a special touch you can decorate your backyard with torch lights for a evening party. Have everyone dress up in bright colorful Hawaiian clothes. Don't forget to play some Hawaiian games like pass the coconut under your chin and the popular limbo. (See Hawaiian-Luau.com for game ideas. link below). This will be one Father's Day your Dad will not forget!

RECIPES:
Macadamia Nut-crusted Shrimp
Jumbo Shrimp about 1 lb
2/3 cup macadamia nuts
1/3 cup plain dry breadcrumbs
1/8 tsp. Cayenne
½ tsp. Salt
2 eggs whites, lightly beaten
Preheat oven to 450 degrees.
Peel and devein shrimp, leaving tails intact. Cut through back of shrimp, making sure not to cut all the way through; flatten. Generously coat jellyroll pan with cooking spray. In food processor, process nuts, breadcrumbs, salt and cayenne until nuts are ground. Dip shrimp into egg whites, letting excess drip off; coat with nut mixture. Place shrimp on baking sheet; coat each shrimp with cooking spray. Bake 5 minutes, until browned. Remove from oven; turn and spray shrimp again. Bake until coating is browned and shrimp are opaque, 4-5 minutes.
Makes 4 servings. Your time in kitchen 20 minutes; ready to serve in 30 minutes.

Pineapple-Coconut Rice
1 pineapple
1 can coconut milk
¾ tsp. Curry powder
1 ½ cups uncooked instant rice
¾ tsp. Salt
¼ tsp. Pepper
1 scallion, chopped
In pot over high heat bring coconut milk and curry powder to boil. Stir in rice, salt and pepper; cover. Remove from heat; set aside until liquid is absorbed, 5-8 minutes. Cut Pineapple in half lengthwise leaving leaves intact. Reserve one half for another use, (fruit Salad). Cut remaining pineapple half into shell for serving rice: cut all the way through rind. Cut half of fruit into 1/2 “ pieces, discarding core; reserve remaining pineapple for use, (fruit salad) Stir pineapple pieces and scallion into rice. To serve, spoon into pineapple shell. Makes 4 servings. Your time in kitchen 15 minutes; ready to serve in 15 minutes.

Maui Citrus Salad
8 oz sugar snap peas (3 cups)
1 pkg (5 oz) mixed baby salad greens, aabout 8 cups
1 can (11 oz) mandarin oranges, drained
¼ sweet onion, such as Maui, cut into slivers
½ cup citrus-flavored salad dressing, such as Hellmann’s Citrus Splash
1 tsp fennel seed, crushed
Bring pot of water to boil. Add snap peas; cook until crisp-tender, about 3 minutes. Drain; rinse under cold water until cool. Place greens on serving platter; top with peas, oranges and onions. Combine dressing with fennel seed; drizzle over salad. Serve immediately.

Strawberries & Cream Deluxe
Large Strawberries, 2 large packages
1 pint ice-cream
1 pint sour cream
rich dark chocolate pieces
Hull strawberries and place in large bowl.
Let the ice-cream soften and mix well with sour-cream. Pour over strawberries. Melt chocolate and drizzle over cream.
