Cauldron Cookies

 

Ingredients:

3/4 cups of softened Butter

2 cups of Brown Sugar

2 Eggs

1 tablespoon of Lemon Juice

2 tablespoons of grated Lemon Rind

2 cups of Flour

1 cup of finely chopped Pecans \

Cream the butter in a large cast-iron cauldron (or mixing bowl). Gradually add the brown sugar, beating well. Add the eggs, lemon rind and juice and then beat by hand or mixer until well blended . Next stir in the flour and pecans. Cover cauldron and refrigerate overnight. After chilled, }}
