Drunken Chicken

Y'all need to get....
1- whole chicken
1- can of beer, OK to sample!
garlic salt
seasonal

Clean out the chickens cavity really good to get that yucky
stuff out! Coat inside with g-salt and seasonal. Open beer,
take a big swig. Set beer right side up as not to spill it!
Set the chicken over top of can, this puts can inside. Coat
the outside outside with g-salt and seasonal. on med. heated
grill, carefully place chicken and beer. Too late for another
sip!!!!!!!!!!

Let cook for a min. of an hour with the lid shut. When chicken
is done, it will either fall over or the meat will pull off
the bones! Don't worry, the beer only steams the meat... no
beer taste in the meat! Remove from grill carefully... HOT
on the fingers!!!!!!!

More people, more chicken...more chicken, cows very happy!

Picadillo

Needed for this great meal:
1 lb. hamburger
2 bay leaves
2 cloves fresh garlic minced
1- 8oz can tomato sauce
1 cup sliced olives
1 cup raisins

Brown hamburger, do not drain grease! Add the rest of the
ingredients and simmer for at least an hour. We like to make
this up the day before to allow everything to blend. Eat over
rice. Easy to make and for such a great taste!

Black Beans and Rice

Needed for this great meal:
3-4 cans black beans, do not drain 2 cloves garlic minced
1/3 cup vineger

Combine all of the above. Slow cook until thick and beans are
soft. Serve over rice. Also better if made the day before
and reheated! Serve the picadea and black beans for a great meal

Conch Fritters

Great Appetizer or Snack!
1 lb conch, finely ground
1/2 green bell pepper, finely chopped
1 large onion, finely chopped
2 tsp baking powder
1 large egg
1 tbsp chopped fresh parsley
Hot pepper sause, to taste
1 clove garlic, minced
1/4 tsp salt
1/8 tsp black pepper
Pinch baking soda
1 C milk
1-1/2 C flour
Oil, for deep-fat frying
Cocktail or tartar sauce

In a large mixing bowl, combine conch, bell pepper, onion, baking powder
egg, parsley, hot pepper sauce, garlic, salt, pepper, soda, milk and flour.
Allow batter to sit refrigerated for 8 hours or over night. Heat oil to
350 degrees. Drop fritter batter by the tablespoon into hot oil. Cook until
golden brown. Drain on paper towels. Serve with cocktail or tartar sauce.
