Hunkar Begendi (Sultan's Favorite)

Ingredients: 3 big aubergines
             flour (approx. 3 fourths of a coffee cup)
             3 spoons of margarine or any kind of oil
             4 coffee cups of milk
             2 coffee cups of grated sheep cheese(kosher)
             1 teaspoon of salt

This is some kind of sauce to be served with meat. (I may send a recipe
instructing a special meat dish that is used with this sauce later.)

To prepare the Begendi, you should cook the aubergines on coal or on
natural gas fire until their peels burn off. After that, dip them in
lemonous water for 15 minutes. By using margarine, yellow the flour in a
pot. Put the aubergines in this pot and squash them. Add salt & milk until
you achieve a puree form. Add the kosher and put the pot on fire for two
minutes until the kosher melts.
