Lamb stew
Ingredients (6 persons):
- 1.25 kg of lamb.
- 150 g of ham.
- 2 middle-size onions.
- 1 tomato.
- 2 green peppers.
- 4 cloves of garlic.
- 1 small glass of red wine.
- Flour.
- 1/2 glass of olive oil.
- Bay leaf.
- Parsley.
- Black pepper.
- Salt.
Preparation:
- Cut the lamb in small pieces. Chop the onions, the tomato, the garlic, the green peppers,
the ham and the parsley.
- In an earthenware pot, heat the oil and brown the lamb slightly. Then add the
chopped vegetables and brown all and turn the pot round now and again.
- Wash down the lamb with some wine and a glass of water. Add a pair of
bay leaves, some salt and black pepper according to one's taste. Boil on a low heat
until the lamb is fresh. It is preferable to put the lid on the pot
in order to keep the taste.
- When the lamb is fresh, add a spoonful of flour to the sauce in order to thicken it
and keep it boiling for some minutes.
- This dish is served in the same earthenware pot.
