Lamb stew

Ingredients (6 persons):

  • 1.25 kg of lamb.
  • 150 g of ham.
  • 2 middle-size onions.
  • 1 tomato.
  • 2 green peppers.
  • 4 cloves of garlic.
  • 1 small glass of red wine.
  • Flour.
  • 1/2 glass of olive oil.
  • Bay leaf.
  • Parsley.
  • Black pepper.
  • Salt.

Preparation:

  • Cut the lamb in small pieces. Chop the onions, the tomato, the garlic, the green peppers, the ham and the parsley.
  • In an earthenware pot, heat the oil and brown the lamb slightly. Then add the chopped vegetables and brown all and turn the pot round now and again.
  • Wash down the lamb with some wine and a glass of water. Add a pair of bay leaves, some salt and black pepper according to one's taste. Boil on a low heat until the lamb is fresh. It is preferable to put the lid on the pot in order to keep the taste.
  • When the lamb is fresh, add a spoonful of flour to the sauce in order to thicken it and keep it boiling for some minutes.
  • This dish is served in the same earthenware pot.
