Shepherd breadcrumbs
Ingredients:
- 1 large loaf of bread or 1 kg of bread.
- 1 clove of garlic.
- 1 spoonful of paprika.
- 200 g of ham and bacon.
- 2 slices of bread for the croutons.
- 250 cubic centimetres of olive oil (1 glass).
- Salt.
- A bunch of grapes.
Preparation:
- Keep the crumbled bread over a damp cloth on the previous day, so that it gets harder slightly.
- Dice the ham, the bacon and the slices of bread.
- In a big pan put four spoonfuls of oil and brown the bacon and
the garlic without peeling. Remove the bacon and the garlic and brown the two slices of bread.
Remove them with the bacon and the garlic.
- Heat the remaining oil, put the breadcrumbs and add a spoonful of paprika and salt,
turning the mixture round continuously until the crumbs get brown.
- Add the bacon, the garlic, the fried bread and the grapes threshed out of the bunch. Serve warm.
Comments:
- As well as the ham and the bacon, some fried red sausages can be added as
accompaniment to shepherd breadcrumbs. In some places a fried green pepper, cut in pieces,
is also added.
- A well-known variation are the "Breadcrumbs with chocolate", which can be served as a breakfast
or picnic with the leftovers of breadcrumbs of the previous day.
- When the breadcrumbs are made with the basic ingredients (no bacon, ham or red sausage),
and they get tough, they can be eaten on the following days in a big cup of milk. In this case
they are known "Grey breadcrumbs".
