Broccoli Gratin

  • 2 bunches broccoli, trimmed and cut into chunks
  • 1/4cup butter
  • 1clove garlic, finely chopped
  • 1 onion thinly sliced
  • 1/4 cup all purpose flour
  • 2 cups milk
  • 1tsp salt1/4 tsp pepper
  • pinch each nutmeg and cayenne pepper
  • 11/2 cups grated cheddar cheese

    Topping :

    1 cup breadcrumbs
    3tbsp butter, melted
    1/2 cup grated cheddar cheese
    2tbsp fresh chopped parsley

    Steam or boil broccoli 6 to 8 mins or until just tender.
    Drain well. Reserve.
    Melt butter in saucepan. Add garlic and onion.
    Cook gently until fragrant and tender, about 5 min.
    Sprinkle with flour. Cook stirring constantly, 3 min without browning.
    Wisk in milk. Bring to a boil and add seasonings. Cook 5min.
    Stir in cheese. Remove from heat.
    Combine broccoli with sauce.
    Transfer to a buttered 2 qt casserole dish or glass baking pan.
    For the topping combine breadcrumbs with butter, cheese and parsley.
    Sprinkle on top of broccoli mixture.
    Bake in preheated oven 350deg oven for 20 mins. or until heated thoroughly.

    Butternut Squash

  • 1 egg
  • grated cheese (about 2 cups)
  • nutmeg 1/4 tsp
  • 1/4 cup butter

    Cook med size squash and mash with butter.
    When cool add whipped egg and 1/4 of the cheese to squash
    Sprinkle the rest of cheese over top and bake in 350deg. oven till cheese melts.

    Forgot.....add nutmeg with butter

    Carrot Cake

  • 4 eggs
  • 2 cups sugar
  • 11/2 cups oil
  • 3 cups flour
  • 2 sp soda
  • salt
  • vanilla essence (1tsp)
  • 2 cups carrot

    Mix eggs with sugar until thick. Add oil and blend well. Add vanilla essence. Add dry ingredients , mixture will be thick and goey. Fold in the carrots and put mixture in Bundt pan or two lof pans (greased) Bake in preheated oven for 1hr 350deg.

    Glaze:
    Melt 1/3 cup butter with 1/2 cup sugar. Add 1/2cup buttermilk and 1tsp vanilla essence an bring to a boil. Remove from stove and add 1tsp b/soda.Stir. Mix will froth

    When cakes are done glaze the top of cakes. Leave cakes in pan so glze can soak. Turn cakes onto a cooling rack and glaze the bottoms.
