The BEST Tacos you'll ever have!
-2lbs. ground pork (don’t use gr. beef- it doesn’t taste the same)
-2 onions (med.-large)
-aprox. 1 Tbsp. oil

Brown the pork and chopped onions together in oil...Drain.
Add 1 can of crushed tomatoes (lg. can) and about 1/3 can of water.

Season with:
-2 tsp. garlic powder (more or less to taste)
-1 tsp. black pepper
-2 tsp. salt
-1-2 tsp. cumin powder
-1 tsp. red pepper (more or less to taste)

Simmer for about an hour, and add water if necessary.
Fill tortilla shells and garnish to your liking!

*Top with: lettuce shreds, diced tomatos, shredded cheddar cheese,
sour cream, chopped scallions,jalepenos and/or whatever else you like.

** I like to lightly fry the tortillas in a small amount of hot oil,
and drain them on paper toweling rather than just heating them.
Doing this gives the tacos a totally different taste.


How about a little desert?

Peach Cobbler

-2 cups all-purpose flour
-1 Tbsp. sugar
-Pinch of salt
-1/2 cup butter(cut into pieces)
-6 Tbsp. ice water
-6 cups fresh peaches peeled and sliced)
-1 cup brown sugar
-1/4 cup all-purpose flour
-1 Tbsp. vanilla extract
-1 tsp. ground cinnamon
-1 egg, beaten
-1 tsp. water
-1 Tbsp. sugar

Combine 2 cups flour, 1 Tbsp. sugar and pinch of salt in a food processor and pulse a few times to mix.
Add butter and pulse until mixture is coarsely mixed. Add ice water and process until combined.
Divide dough into two equal parts.
Spread one part along the bottom of a 2-quart baking dish that has been sprayed with non-stick cooking spray.
Combine peaches, half the brown sugar, 1/4 cup flour, vanilla and cinnamon and toss.
Spread peaches over dough. Sprinkle with remaining brown sugar.
Cut other half of dough into 2-inch wide strips and place on top of peaches.
Combine egg, 1 tsp. water and 1 Tbsp. sugar and brush over dough.
Bake at 375 for 45 minutes.
Allow cobbler to stand for at least 30 minutes before serving
