Cucumber & Tomato Salad


1 peeled cucumber, sliced then cut in half
2 diced vine tomatoes
1 bulb chopped scallion
Organic Balsamic Vinegar (is this raw?) and Cold Pressed Oil

Place chopped veggies on dish then drizzle with the oil and vinegar. Top with a couple sprigs of Cilantro (optional). Easy as that and it's filling.

Note: My husband even loves this, and he's not a raw fooder. And it's really great over a bed of chopped red cabbage.
