Soup Side Salad Lunch Salad Congealed Salad
Vegetarian Clam Chowder

This recipe is flour, dairy & meat free!
6 medium potatoes
3 large fresh mushrooms
2 medium white oniions
1/2 stick margarine
parsley
salt
garlic powder
water

Wash & pat dry potatoes, cut in small cubes, leaving skins on. Wash onions & cut into rings. Wash & finely dice mushrooms. (These are the "clams.") In a large soup pot, saute mushrooms & onions in margarine and herbs (amounts to taste) till onions are tender. Mix in potatoes & stir till coated with herbs & juices. Cover with water, bring to boil, cover, reduce heat to simmer 10-15 minutes till potatoes are fork tender. Take 2 cups of potatoes & enough broth to blend in blender till smooth like puree. Return to soup & stir well. This is the thickener--no milk or flour recipe.

Carrot Crazy

1 lb carrots peeled & shredded--save time with pre-shredded bags.
1/2 cup raisins--save time with the pre-measured boxed variety!
1 8 oz can crushed pineapple, drained
1 8 oz carton vanilla yogurt
1 small bag slivered almonds


Mix well, chill & eat!

Fish Stick Fancy


1/2 small cabbage, shredded--save time with preshredded bags.
1 small onion, diced.
4 tblsp pickle relish, sweet.
1 cup mayonaise
3 tblsp sugar
18 fish sticks, cooked & torn into pieces


Prepare veggies, mix all ingredients, chill & serve.

Blueberry Salad

Our Family Reunion Favorite!

Bottom Layer:
2 3 oz pkgs. grape gelatin
1 cup boiling water
1 cup pineapple juice (from drained canned following in recipe
16 oz can crushed pineapple
16 oz can blueberry pie filling
Dissolve gelatin in boiling water, add juice, pineapple & pie filling. Stir & refridgerate till set.

Top Layer:
8 oz carton sour cream
8 oz pkg cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla
Beat ingredients till fluffy, spead atop the firm gelatin. Refridgerate till all is chilled--2 hours. YUMMY!
