This tutorial is mainly directed towards anime .mkv's, but can be used for converting any .mkv.
To convert .mkv to .mpeg, you've got to convert the .mkv to an .avi first. Converting the .avi to .mpeg is the easy part.
Programs Needed
-MKVExtractGUI here.
VirtualDubMod (v1.5.10.2) here.
An .avi to .mpeg converter, such as Xilisoft AVI MPEG Converter 2.1 or WinMPG
Step 1.
Create a folder named "Extracted Mkv Files"
Open up MKVExtractGUI (View picture)
-Select "Browse" under "Martoska File" - Select your .mkv file you wish to be converted. Set the Output directory to "Extracted Mkv Files" folder you have made. Select the Video and both Audio files to be extracted and then extract them.
If the program isn't allowing files to be extracted to a selected folder, simply extract the files. The extracted .mkv files will be in the same folder as the original .mkv (which remains).
The extracted files will be named "Track 1," "Track 2," and "Track 3", etc- move them to the Extracted .mkv file folder.
-Open up track 2 & 3 (4, 5, etc). They are your audio files. Open them up and delete the one's you will be using. If you're planning on using a forign language and plan to include subtitles, you will need to extract the subtitle files also. Click here for more information.
-Load up VirtualDubMod. (View Picture) Open "Track 1" (which is an .avi with no audio) -Click on Streams>>Streams list. In this menu, select "Add" - Find your audio file from the extracted mkv files. If the audio file is in MP3 format, then you can skip this step. But if it's in .ogg format, it must be converted into a .mp3.
Here you will need to:
-Click OK. Then click "Save WAV" - The dropdown menu only has the option of converting it to a .wav. Ignore this and title the file "Example.mp3" - Save this file in the extracted .mkv folder. A window will pop up. It will take 5-10 minutes converting for a 25 minute file.

-Now right click on the mp3 audio file and click "Direct Stream Copy"
-Now click "Ok" to return back to the main menu.
Note for subtitles: If it is set to "Direct Stream Copy" the subtitles will NOT show up. You will have to keep the setting at "Full Processing" and compress the file. To do so go Video>>Compression.
Select something to compress the file, such as DivX. The file quality slightly goes down by doing this.
If you aren't using subtitles, then:
-Click "Video" and then selece "Direct Stream Copy" (otherwise you'll end up with a file many many many times the size of what it should be-too large for the one episode to even fit on a DVD)
For both subtitled and non subtitled projects, these are the final steps to converting the .mkv into an .avi.
-Click File>>Save As>>Name the file whatever you wish. A windown will pop up, it is now processing the video. This will take 3-5 minutes if done by "Direct Stream Copy" and 8-14 (DivX example) minutes if done by "Full Processing"-although it will vary depending on how you compressed the file.
-Test out your video file. Make sure the audio is timed correctly with the video. And the subtitles if added are on time and are placed right.
Then:
-You can now delete all other files as they are no longer needed.
You have now successfully converted the .mkv into a .avi!
Some DVD players will play .avi files, so converting the .avi to .mpeg would be pointless. If your DVD player can play .avi's, burn to CD/DVD and enjoy.
If not, there's only one other step left.
-Open up your .avi to .mpeg converter. Select your .avi and start converting!
When burning your .mpeg's, burn them as a Video-CD/DVD.
