| Whole Chicken | 1 (1200g) | Maltose | 1 tbsp |
| Ginger | 3 slices | Oil | 1 tbsp |
| Spring Onion | 3 pieces | Water | 1 cup |
| Rose Wine | Suitable | Dark Soya Sauce | 1 cup |
| Rock Sugar | 500 g | Light Soya Sauce | 1/4 cup |
| Method: | |
| 1. | Wash the chicken and pat dry. Then rubs wine all the chicken, inside and out. |
| 2. | Add a little of hot water inside the maltose, then coat on all over the chicken. |
| 3. | Heat oil in wok and fry ginger, spring onion. Add the rest of the ingredients. Bring to the boil and add chicken. |
| 4. | Turn the chicken from time to time and simmer in sauce until cooked. Cool slightly and cut into serving pieces. |
