Chicken in Soya Sauce

Ingredients:
Whole Chicken1 (1200g)Maltose1 tbsp
Ginger3 slicesOil1 tbsp
Spring Onion3 piecesWater1 cup
Rose WineSuitableDark Soya Sauce1 cup
Rock Sugar500 gLight Soya Sauce1/4 cup

Method:
1.Wash the chicken and pat dry. Then rubs wine all the chicken, inside and out.
2.Add a little of hot water inside the maltose, then coat on all over the chicken.
3.Heat oil in wok and fry ginger, spring onion. Add the rest of the ingredients. Bring to the boil and add chicken.
4.Turn the chicken from time to time and simmer in sauce until cooked. Cool slightly and cut into serving pieces.

Tips:
1.Remember to fry the ginger and spring onion before add the rest of the ingredients.
2.Cook over low heat.
