Baked Sole Fillets with Cheese

 
Ingredients :
Sole Fillet 2 pcs (about 250g) Cheddar Cheese (grated) 100g
Egg White 1 Mayonnaise 3-4 tbsp
Bread Crumbs some Corn Flour some

 
Seasonings :
Salt 1/4 tsp Pepper pinch

 
Method :
1. Wash the sole fillets, pat dry, marinate with salt and white pepper for a short while.
2. Dust the fillets on both sides evenly with corn flour, coat with egg white and then bread crumbs.
3. Line the baking tray with foil, lay the sole fillets flat onto the foil, sprinkle the grated cheese on top evenly, squeeze some mayonnaise on top, sprinkle some more grated cheese on top.
4. Bake over 180oC for 5-7 mins.

 
Gist :
1. The texture of the fillets will change if you over-marinate it with salt, so remember don't make it too long.
2. The fillets will be more tender if we dust it with some corn flour before coat, however just a thin layer of corn flour is fine.
3. You can add some more cheese and mayonnaise if you like.
4. Can be substitute with ordinary salad dressing, but I would recommend to use mayonnaise especially the one made in Japan.
