Fried Prawns and Mango in Wafer

Salt 2/3 tsp Cornflour 1 tsp

MethodĄG
1. Skin, remove and core the mango.  Then cut it in strip.
2. Trim wafer paper into 8 pieces of 3 inches-wide strips.
3. Trim off leg and shell but reserve head and tail of the prawns.  Rinse off and wipe dry.  Make a slit in the back of the prawns and flatten to open.  Add in seasonings and marinate for a while.
4. Put a strip of mango on a prawn and wrap with a piece of wafer paper.  Dry fried in hot oil until its golden brown and done.  Drain and soak up the fat.  Dish up and serve with either worcestershire sauce or mayonnaise.
