Papaya and Fish Soup

 
Ingredients :
Papaya 1pc Snake Head Fish 1pc
Ginger 2 slices Dried Red Dates 8 pcs

 
Method :
1. Remove the skin and the seeds from the papaya, wash it thoroughly and cut it into large pieces.  Wash the red dates and remove the pits.
2. Clean the fish and wipe dry.  Heat up some oil and saute the ginger slices, fry the fish over slow to medium heat,  until it turns golden brown, then put it into a bag.
3. Bring approximate amount of water to the boil.  Add all the ingredients, cook over large heat then turn into lower heat and simmer for about 2 hours after boil.

 
Tips :
1. The fish won't smell if it is fried before putting in soup.  It can also help to get rid of fishy if you sprinkle a pinch of pepper inside its abdomen before fry.
2. If you use typical chinese wow, you can rub it by using ginger slices over medium heat to avoid stick to the wow easily (however you can ignore this step if you use non-sticky pan). 
3. Can substitute with another kind of fish.
4. Choose the papaya which is not ripe enough.
