1 Cup pumpkin
1/2 cup butter, softened
2 large eggs
2 1/4 cups all-purpose flour
3/4 cup packed brown sugar
2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ginger
1/2 cup pecan halves
Preheat oven to 350
Puree the butter in a large bowl and then add in pumpkin and eggs mixing on low speed.
Then add in flour, sugar, baking powder, baking soda, cinnamon and ginger till everything is blended. Increase speed to medium for two minutes.
Use 3 Tablespoon of butter for each cookie and spoon batter into mounds about 2 1/2" apart on an ungreased cookie sheet.
Place a pecan half onto the center of each cookie
Bake cookies 18-20 minutes until light golden brown. Loosen cookies and remove to wire racks to cool
