Pumpkin Plenty

A nice center piece for a great Fall Dinner.

Ingredients

1 pumpkin (about 3 pounds)

2 onions, chopped

4 Tablespoon butter

1 cup heavy cream

1/8 teaspoon nutmeg

1/8 teaspoon ground ginger

1 Tablespoon fresh snipped chives

Directions

Scoop out the seeds and fibers from the interior of the pumpkin. Scoop out all about 1/2 inch of the meat. Save the pumpkin shell and lid to use as your serving bowl.

Mince the pumpkin meat.

Saute the onions in the butter. Stir in the pumpkin meat. Add 4 cups water; simmer for 25 minutes. Puree the mixture in a blender or food processor.

Return to the pan. Stir in the cream, nutmeg and ginger. Bring to a simmer.

Pour into the pumpkin shell to serve. Garnish with the chives.
