Salsa

Nice recipe to add to my "to try" list.

Ingredients

2 cups chopped tomatoes

1-2 minced jalapeño chiles

½ cup minced onions

½ cup minced cilantro

clove garlic, crushed (optional)

salt & pepper to taste

Directions

Combine all ingredients in a bowl. (If you don't have ripe fresh tomatoes, drain whole canned ones and chop.) Leave the seeds of the jalapeños in -- if you dare.

Stir together and let sit at room temperature for 20 minutes. Refrigerate if desired.

Suggestions & Servings

Alternative suggestions 1: Add ½ cup of drained canned corn and/or black beans.

Alternative suggestions 2: Add ½ cup of chopped pineapple or mango & omit garlic.

Enjoy with chips, over quesadillas, or as a topping for grilled chicken or fish.
