Sweet Corn Pudding

This was shared with me a few years ago by a dear friend SandyC. I have yet to try it but I will.

Ingredients

1 box Jiffy corn muffin mix

8 oz sour cream (fat free works also)

1 can cream corn

1 can whole kernel corn (drained)

1 egg (slightly beaten)

1 stick butter or margarine (melted)

Directions

Heat oven to 350 degrees. Prepare shallow baking dish (medium to large size) with non stick cooking spray.

Mix in large bowl the corn muffin mix, sour cream, can of cream corn and can of whole kernel corn (drained).

Add 1 egg and stick of butter. Thoroughly mix all of the ingredients together. Pour into prepared dish and bake for 45 - 50 minutes until done.
