Macaroni Salad

This is my favorite macaroni salad.

Ingredients

3/4 cup Mayonnaise

2 Tbsp cider vinegar

1 Tbsp prepared mustard (optional)

1 tsp sugar

1 tsp salt

1/4 tsp pepper

8 oz elbow noodles (about 1 3/4 cups), cooked, rinsed with cold water and drained

1 cup sliced celery

1 cup chopped green or red pepper

1/4 cup onion

Directions

In large bowl combine first 6 ingredients.

Add elbows, celery, green pepper and onion; toss to coat.

Cover; chill to blend flavors.

Suggestions and Serveings

Tuna macaroni salad: In step 2, add 1 can (6 oz) tuna, drained and flaked.

Shrimp macaroni salad: In step 2, add 1/2 lb cooked, cleaned small shrimp.

Makes 5 cups. Prep time: 15 mins.
