Steamed Chinese Sponge °¨©ΤΏ|
Ingredients :
strong flour 150 g
baking powder 1 tsp
bicarbonate of soda 1/4 tsp
butter 50 g
lard 30 g
eggs 3 no.
soft brown sugar 130 g
evaporated milk 90 ml
vanilla essence 1/4 tsp

Method :

1. Prepare a 17 cm bamboo steamer by lining it with greased greaseproof paper.
2. Melt butter and lard.

3. Sieve strong flour, baking powder and bicarbonate of soda together.

4. Whisk eggs and sugar until light and fluffy. Add flour, evaporated milk and vanilla essence. Beat well.

5. Mix in melted fat.

6. Pour mixture into the bamboo steamer. Steam over high heat for 30 minutes. Serve hot.
