Steamed Chinese Sponge °¨©ΤΏ| | |
Ingredients : | |
strong flour | 150 g |
baking powder | 1 tsp |
bicarbonate of soda | 1/4 tsp |
butter | 50 g |
lard | 30 g |
eggs | 3 no. |
soft brown sugar | 130 g |
evaporated milk | 90 ml |
vanilla essence | 1/4 tsp |
Method : |

1. Prepare a 17 cm bamboo steamer by lining it with greased greaseproof paper. | |
2. Melt butter and lard. | |
3. Sieve strong flour, baking powder and bicarbonate of soda together. |

4. Whisk eggs and sugar until light and fluffy. Add flour, evaporated milk and vanilla essence. Beat well. | |
5. Mix in melted fat. |
|
6. Pour mixture into the bamboo steamer. Steam over high heat for 30 minutes. Serve hot. |
