FRIED FROG LEGS
Serves: 6
1 and 1/2 dozen frog legs
3 eggs, beaten
1/4 teaspoon red pepper
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1 cup bread crumbs
1/2 cup lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup corn oil
In a saucepan, combine lemon juice with enough hot water to scald frog legs for 5 minutes. Remove frog legs from the pan; drain and discard the water. In a bowl, combine seasonings with onion powder; garlic powder and eggs. Dip frog legs in the egg mixture. Roll in the bread crumbs. In a saucepan, heat corn oil to 450 degrees. Fry until golden brown. Serve with cream of wine or mustard sauce.
